Banana muffins


Last night me and Jack made some banana cakes, we used to make these all the time when Amber was really really little but now she wants some I needed to make a dairy/egg free alternative! They came out really really tasty;
200g plain flour
1/2 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon of salt
2/3 mashed bananas
125g caster sugar
75g melted butter (we used vitalite)
1 linseed egg (made with 1 tablespoon of linseed and 2 1/2 teaspoons of water, pop in fridge for 5 mins)
Splash of milk alternative (we used oat)

Mix the flour, baking powder, bicarbonate, salt and sugar in a bowl.
Mash the banana and add the melted butter and linseed egg in a separate bowl.
Add the dry bowl to the wet bowl then add a splash of milk alternative.
Mix well and add to baking cases (this makes 10)
Cook on gas 5/ electric 170 for 20 minutes
Enjoy! These two did!

Skin prick tests next week! Finally!!!

Ok so Ambers got her skin prick tests next week for soya, wheat and tomatoes! The paediatrician is also worried she may need a test for celiac disease so.....She's back on wheat for a week! Honestly I'm so confused!! I'm also hoping they may test for eggs again incase she's outgrown them! She's stopped having her formula milk now too as it had hydrolysed cows milk in and we were worried the chronic dihorrea may be from that? We don't know, neither does the doctor or the paediatrician or the dietitian so this is why she's having the tests! I'm dreading what may come up, she's had a bad reaction to soya so I guess she may be off that but we can't guess! So right now she's egg milk soya and tomato free. Let's just hope it gets sorted! She's pretty happy even with the dihorrea but she has lost a little bit of weight.... She had some toast tonight think she thought all her birthdays had come at once! 😃

Today's shopping...

We went to tesco today to get some gluten free, wheat free, milk free, egg free, soya free, tomato free things in for Amber. There aas no bread that was gluten free and egg free so instead we had to get cereals, we got Tescos Free from cornflakes they are free from all the things about with no May contains so very happy with that! We also picked up some Nutribix, these are new and I was recommend these by another allergy mum on Twitter they were on special at £3 for a box of 24, that's 24 meals for Amber so great value! Amber was having Oatly milk but now can't have oats so we got Coconut dream with calcium, I gave Amber some for her bedtime drink and she was looking for more, I even had a glass myself! Definitely will be having this more often!!! I also needed a gravy for when I make her mash etc and this Free & Easy gravy was the only one free of all the above! It smells great and I'll post some recipes when I'm using it! Tesco also had free from pasta and cous cous which is great because Amber loves these, tonight she had Cod, Cous cous, peas and butternut squash she loved it! I also needed some snacks because she's ALWAYS eating, if she isn't sleeping then Amber is eating....We picked up these kiddilicious snacks strawberry puffs, carrot wafers, Apple crisps, banana bites and fruit wiggles! All free of the above! She loves kiddilicious! It's so helpful to have a toddler and baby food company that is free of so many allergens! So I'll let everyone know Ambers verdict on the things she hasn't ate today, But I'm very very impressed with Tesco's range of Free from!!

More allergy testing....

So since Ambers had an upset stomach (diahorrea) for months now we had to visit the dietitian today and give a list of things we think it could be, with her reaction the other day I thought wheat or soya and she also gets a terrible rash off tomatoes! A few people have suggested gluten could be a cause for this too so I took my list and food diary up. We were told to just take her off everything to give her stomach time to get normal again! The paediatrician is going to send us word for skin prick tests and then it's just a case of introducing one by one.....I think we have a long journey ahead..... Now egg free milk free wheat free gluten free soya free tomato free Amber Rose..... (Help!)

Still figuring this out....Soy sauce tonight :/

not a very clear pic (sorry) but had a awful skin reaction tonight to soy sauce, Amber was just sitting eating her stir fry then out of no where she flared up in hive like eczema! Now for months we have had problems with her stomach and can't find the cause, I thought it was tomatoes as her face goes bright red off them but no tomatoes here!! Only soya and wheat.....At her last blood test she was borderline wheat so I'm not sure. It's like an on going circle in which I don't know what it could be! She's due skin pricks this month so I just pray we can find out what exactly is going on.... Any allergy stories are more than welcome I'm also on Twitter @Sarah_janeray !!

GBS

This post isn't about allergies but about something that is very very close to my heart. When I was pregnant I found out completely accidentally I had Group B strep so all the way through I could plan with doctors about the birth, I wanted a water birth but unfortunately you can't as you have to have a antibiotic drip while in labour. Amber was a very very fast birth and the antibiotics were unable to get passed through to her quick enough so when she was born she wasn't breathing properly. She was taking to the special care baby unit and we spent 7 days in hospital as she needed antibiotics day and night. She grew stronger and I was called down to SCBU whenever she needed fed then after a few days she could come up to the ward with us and we took her down when she needed the antibiotics. It was a very stressful week I won't lie I couldn't sleep as so much was going on on the ward I was constantly being monitored aswel as Amber but all the staff were absolutely amazing! GBS is so common in a massive amount of women yet no one gets tested for it and lots of babies lose their lives! Amber is 1 now and you would never know how poorly she was! I hope people will see this and have a look on the website there is a petition to sign for the NHS to routinely check for GBS because there's so many babies who aren't as lucky as our Amber. http://gbss.org.uk

#allergyepidemic

its interesting reading about the new allergy epidemic, I saw it on sky news about the poor little boy with severe eczema and allergies and it's sad how common allergies are these days. I have personally found it difficult and very very stressful. It's all well hearing a baby can't have certain foods but when they are starting to grow and they want new things it's hard. If you don't book from scratch there's little you can do, I've found anyways. Amber eats mainly veg, meat and fruit and little else yet we are still battling what It is that is irritating her skin and bowels.... Here is a picture of her at 6 month she was very sore severe and infected eczema, doctors gave me all sorts until they referred us to a paediatrian who finally started helping us. I still feel like our journey is just starting as we are still unsure as to what exactly is still upsetting ambers tummy. It certainly makes me realise just how hard allergy mums and dads work!!

Amber is 1!!!





So Amber rose is 1 today and yesterday for new year we made a little party food! We made little mini vegan pizzas, with just a simple pizza dough recipe I think it was 500g plain flour, 400ml warm water and a teaspoon of yeast, leave to rest for two hours then roll and cut. We added tomato purée and herbs the violife cheese! We also made cheese savoury using violife cheese and plamil foods egg free Mayo that we got from Holland and Barrett! We also made crispier cakes with left over dairy free kinnerton Santa! And chocolate flapjacks! We used 100g vitalite, a small amount of caster sugar, 4 teaspoons of golden syrup and 100g oats then topped with melted chocolate. We also had Pom bears, mini breadsticks and haribo bears! As you can see Amber is loving her cake we got it from Sky Apple cafe in heaton (vegan raspberry and vanilla) I've never ever had a cake without eggs or milk in it and I must say it was probably one of the nicest and moist cakes I've ever tasted!
